Wild Mushroom Grill Toasts
The smell of toasted bread and sizzling mushrooms always takes me back to evenings when everyone arrived hungry and nobody waited for the food to be finished. I would stand by the stove, dancing a little to old music while stirring mushrooms in butter, and my daughter would sneak pieces of burrata when nobody was looking. The bread crackled, the mushrooms turned golden and glossy, and the creamy burrata melted into every little corner. When the warm burrata melts into the grilled bread, the mushrooms release their buttery juices, and the sweet balsamic glaze touches every bite, this simple toast becomes something much bigger. For the Mushroom Topping
250 g oyster mushrooms, torn by hand
200 g king oyster mushrooms, sliced lengthwise
150 g chanterelle mushrooms
2 tbsp extra virgin olive oil
2 tbsp Garlic butter
2 tbsp fresh parsley, chopped
Sea salt, to taste
Freshly cracked black pepper
For the Toasts
1 rustic sourdough loaf
3 balls fresh burrata (approximately 375–400 g total)
60 g freshly grated Parmesan cheese
2 cups mixed microgreens
Maple Balsamic Drizzle
1 tbsp maple syrup
2 tbsp balsamic vinegar
Optional Finishing Touches
Extra Parmesan shavings
Fresh parsley
Good olive oil
Fresh cracked pepper

1. Prepare the Drizzle
In a small saucepan combine:
maple syrup
balsamic vinegar
Simmer gently for 3–4 minutes until slightly reduced.
Set aside to cool.
The drizzle should be glossy and lightly syrupy.
2. Cook the Mushrooms
Heat a large skillet over medium-high heat.
Add:
olive oil
Garlic butter
When the butter begins to foam, add all mushrooms.
Allow them to sit undisturbed for 2–3 minutes so they develop a rich golden color.
Stir and continue cooking for another 5–6 minutes.
Add:
parsley
salt
black pepper
Cook for 1 minute more.
The mushrooms should be golden, slightly caramelized and beautifully fragrant.
3. Grill the Bread
Slice the sourdough into thick slices.
Lightly brush each side with olive oil.
Heat a grill pan until hot.
Grill the bread for:
Add Garlic butter
2–3 minutes per side
until deep grill marks appear.
The outside should be crisp while the inside remains soft and chewy.
4. Assemble the Toasts
Place the grilled bread onto a serving board.
Tear the burrata into generous pieces and spread onto each slice.
Let the creamy center settle into the warm bread.
Top with the sautéed mushrooms.
Scatter microgreens generously over each toast.
Finish with grated Parmesan.
5. Final Finish
Drizzle lightly with the maple balsamic reduction.
Add:
extra Parmesan
cracked black pepper
a few drops of olive oil
Serve immediately while the bread is still warm and the burrata is soft and creamy.

Mix roasted pumpkin cubes or grilled zucchini with the mushrooms.
